Been on another muffin kick lately, making them like they are going out of style and freezing, but getting tired of making the same old stuff.

Peanut butter banana chocolate chip, Matcha, Tropical (banana, pineapple, coconut), Pumpkin and Fruitcake muffins are OK but getting old.

Anybody got anything new I can add to the arsenal? Looking for new ideas.

I do have plans for a maple/bacon muffin.:cool:

Interesting combo.

Would you use fresh, frozen or dried cranberries for that?

Actually this is the recipe I use. I know it doesn't sound the like a good combo but they are yummy ! Fresh or frozen are fine, I prefer fresh cranberries.

•2 cups all-purpose flour, sift before measuring
•2/3 cup granulated sugar
•1 tablespoon baking powder
•1/2 teaspoon salt
•1 egg
•3/4 cup milk
•3 tablespoons vegetable oil
•3/4 cup fresh or frozen cranberries, chopped
•2 tablespoons finely grated orange peel
•2 tablespoons chopped pecans or walnuts

Sift dry ingredients together into bowl. Measure remaining ingredients into a well in center of the dry ingredients. Stir just until all flour is moistened. Fill 12 greased muffin cups or paper liners about 2/3 full. Bake at 450° for 18 to 20 minutes. Makes 1 dozen muffins.
If using self-rising flour, omit the baking powder and salt.

And here is another one I have tried :)

Cappuccino Muffins Recipe

•2 cups all-purpose flour
•1/2 cup sugar
•2-1/2 teaspoons baking powder
•2 teaspoons instant espresso coffee powder (or instant coffee)
•1/2 teaspoon salt
•1/2 teaspoon cinnamon
•1/4 teaspoon nutmeg
•1 cup whole milk
•1/2 cup butter, melted and cooled
•1 egg, slightly beaten
•1 teaspoon vanilla extract
•3/4 cup semi-sweet chocolate mini-chips

Preparation:
Preheat oven to 375 degrees F. Line muffin tins with papers or grease liberally.

In a large bowl, whisk together flour, sugar, baking powder, espresso or instant coffee, salt, cinnamon, and nutmeg. Set aside.

In a medium bowl, mix milk, butter, egg, and vanilla until combined. Stir milk mixture into flour mixture only until combined. Do not overmix. Fold in chocolate chips.

Fill muffin cups 3/4 full. Bake 15 to 20 minutes for standard muffins, 10 to 12 minutes for mini-muffins.

Cappuccino muffins freeze well.

I actually make a variation of the Cappuccino muffin. Its a Mocha muffin and it contains cocoa. :cool:

I may give the Cran/Orange a go next week when I'm off.
